Bubble and Squeak

Here they are– my version of the British “Bubble and Squeak.” All in all they were pretty tasty. Similar to a potato cake, but with cabbage mixed in. Definitely an easy way to sneak cabbage into one’s diet. You can find the BBC Food recipe I loosely followed here:

But I am incapable of following a recipe exactly. So here’s what I actually did:

  1. Finely chop about 1/3 of a head of Savoy cabbage.
  2. Dice one small onion.
  3. Saute the onion in butter, then add the cabbage, a cube of chicken bouillon, and some water.
  4. Cook the cabbage and onion until tender.
  5. Mix the cabbage and onion mixture with leftover mashed potatoes. Let cool for a bit.
  6. Shape into tiny patties, and fry in batches in sunflower seed oil.
  7. Desperately miss my splatter guard back at home.
  8. Determine to buy a cheap apron here.

Voilà! A Yank’s version of Bubble and Squeak. Next up is parsnip soup…
