Bubble and Squeak
Here they are– my version of the British “Bubble and Squeak.” All in all they were pretty tasty. Similar to a potato cake, but with cabbage mixed in. Definitely an easy way to sneak cabbage into one’s diet. You can find the BBC Food recipe I loosely followed here:
But I am incapable of following a recipe exactly. So here’s what I actually did:
- Finely chop about 1/3 of a head of Savoy cabbage.
- Dice one small onion.
- Saute the onion in butter, then add the cabbage, a cube of chicken bouillon, and some water.
- Cook the cabbage and onion until tender.
- Mix the cabbage and onion mixture with leftover mashed potatoes. Let cool for a bit.
- Shape into tiny patties, and fry in batches in sunflower seed oil.
- Desperately miss my splatter guard back at home.
- Determine to buy a cheap apron here.
Voilà ! A Yank’s version of Bubble and Squeak. Next up is parsnip soup…
